What is the difference in these differentials ?

Flip em over. One probably has the long thru bolts (left?). The other studs?

I prefer the security of the thru bolt style. If you use the stud type, the wire nuts together, no cotter pins.

Left is later style. Dont know the year they changed off the top. A trip to McCally will be in order.

The one on the left has grooves cut in the top and the spider gear appears to be out of alignment.

I have several with those grooves. If we’re looking at the same thing those are supposed to be there. Here’s another one with the grooves

It looks like I can mix and match the different styles of differential halves. I can used the bottom half with the thru bolts, and then go with a top half with or without grooves. Both look good in terms of wear.

I have switched tops. The axle gear hole is/was originally 1.812" Measure them, to know for sure.
A best guess on the stud type usage is 14-20,21. The first gen after the 1.807" axle gears.
