Gasket sets from the Model T vendors, listed on the home page here, are just fine. Can't really tell variations to these. Most kits sell for $35 w/o head gasket. That adds another $18 -$29 depending on the type of head gasket you want. So about $60 for vendor non-branded sets that always perform for me.
On-line you can buy name brand "FelPro" gasket kit for the Model T, but it is an obsolete part so comes with the associated 'obsolete' part price. Typical offerings on that set are $140 - $160, but Summit site still shows the kit as complete, but the photo shows no timing cover gasket, so don't know if it is included or not. But at that high price, the Model T vendors that supply our needs, have a lower purchase price and besides, they support our hobby too.

I bought gaskets for the rear axle. None of them fit. They were all to small. I’m thinking about using a stainless steel shim to replace the gasket and then seal it with permatex. The gasket for the rearend halves was 1/2 “ too short.

Thats not a gasket, its a shim. Axle housings didnt have gaskets. Get your clearences & assemble with ultra black silicone.
Otherwise, in general paper gaskets dry out & shrink. Soak them in water to get them back to size.

Paper gaskets that are very thin and narrow like those shrink when dry. Just spray with water and they become flexible again and full size.
Remember too much gasket at the pumpkin halves can separate your desired fit established for the thrust washers.

I have been leaving the rear end center section gasket out unless need just a smige more clearance, I use Permatex #2. While there may be some variations between the suppliers parts suppliers, they pretty much are all the same gaskets. Yes, plant fiber (paper) gaskets do shrink over time as they dry out if the gaskets have been on the shelf for a while, as do the cork composite.

Some gaskets are best bought ready-made (front cover, generator mount, pan). Others are easily made at home with gasket paper from the local parts store (water inlet & outlet, carb-to-manifold, Bendix cover, et al.)

If you need a gasket/shim to set up the two halves, you could just remove the same thickness from the right hand side bronze thrust washer. If you trim the left side washer, it may upset your pinion/crown wheel mesh. Then assemble with the sealant of your choosing.

Ford added a housing gasket in 1919, so in fact we are leaving them out and just using sealer. The gaskets between the pinion housing and center were not used, and are shims to adjust the depth of the pinion gear.

Maybe anecdotal, but I have parted out MANY rear ends.
Never seen any signs of a gasket between the housings. FWIW.
