Wheeler Schebler carb questions

I have 2 WS carbs and I am thinking of putting one on my speedster. The one on the left was sold to me by Uncle Stan. I do not remember who sold me the one on the right. I have switched the air intakes, but they are basically the same. I found an article that states I should open the idle adjustment about 1 1/4 turns and the high speed 4-5 turns.
The carb on the right has on inlet that faces straight back. The carb on the left faces toward the frame. Is the left one adjustable and I can turn it to face straight back?
Since the inlet is down low compared to an NH, how have you run the fuel line and is there a way I can put a valve in the line that I can reach so I can turn off the fuel at the engine?
