Are Boyco cans supposed to hang over the running board this much, or are these for a different vehicle?

There were different sized cans available. As you suspected, these are appropriate for a larger car.
Doesn’t mean you can’t use them if you want.

Might be better suited to a 26-7's wider running board.

If you can find a mounting tray that's made for them mounting to a narrow running board would not be a problem. mounting tray would still stick out a little but cans would be secure.

You can bolt a wooden base to the running board using the existing holes for the fender-to-running board and running board to frame brackets. That way you do not have to drill any holes in Ford parts. The cans can then be mounted to the base board in any way you choose.

The pictured cans are like the ones I bought for $2 and $3 at auction. Yes they were made for cars larger than a Model T, but the price was perfect and they work just fine. I made a carrier that clamps on the running board and doesn't require drilling any holes.
