When it goes time to line bore to size , I will be using my lathe, which surface on the ball do I use to indicate off ?

The machined edge under the mounting flange. This is where it contacts/centers itself in the motor.

Where the flange meets the ball part, there is a machined surface, that is where you center off.

I made use of a T wheel hub flange plate as a face plate for the lathe years ago, still using it, centre the ball cap at the machined surface near the ball cap flange.
