We just noticed blackened paint by the rear brake . .

and are wondering if it’s a lack of grease, or something worse . . Any thoughts ?

Your brake shoes are dragging on the drums and the heat from the friction burned the paint.

James, Fix and adjust the dragging parking brakes not to drag on drums when hand lever is forward. Also read post on how to adjust for a free neutral. When you clean and repaint the drums in the damaged area, keep the repaint to a thin layer, the burnt paint looks way to hick in the picture.
