Roof 16 engine help

I am finally putting my 16 Valve Roof engine together and want to have a few words of advice from others. It is a model B roof and I am using a new scat crank. It has been suggested to me that for driving a stipe 250 cam and stock flattop pistons are the best way to go. What do others think who have had experience with these heads? I want power but I don’t want big problems either. The 250 cam and stock pistons have been suggested to me by a trusted expert.
So I need to know the following:
1: what do I do for a head gasket?
2: what do I do for valve springs?
3: is a stipe 250 going the best choice for a cam or should I go with a higher lift? Like a 280 or 290?
