I am rebuilding my driveline and working on the driveshaft now. In front of the pinion gear is a roller bearing. I don't understand how that bearing is lubricated. Should I install a zerk?

It gets lubed by flung axle lube, as does the thrust bearing above it.
No need to re-invent the wheel.
For the sake of argument, how you gonna drill & thread for a zerk? The outer race is harder than the hubs of hell.

On the older style with the pressed in sleeve, the sleeve has a hole where the stepped bolt fits into it to retain it in the housing. If one were to get creative (which in this case shouldn't, one could drill and tap that stepped bolt for a small zerk.
In this case as stated above, not needed as it gets plenty of lube from the rearend along with any oil that leaks down the driveshaft tube from the U-joint ball.
